Spicy Chicken Soup

Serves - 4
Ingredients
16 ounces chicken thighs (cooked and shredded)
2 tbsp avocado oil, olive oil, or ghee
2 medium chili peppers, sliced
1 tsp coriander seeds
1 tsp turmeric
½ tsp ground cumin
4 tbsp tomato paste
4 cups chicken broth (see basic chicken stock)
1 medium avocado
4 tbsp chopped fresh cilantro
Juice of ½ lime
Salt and pepper to taste
Steps
Add 2 tbsp. olive oil, heat up the coriander seeds and sliced chili for 2 minutes
Add broth and bring to a boil, reduce to simmer
Season with turmeric, ground cumin, salt and pepper
Add tomato paste and simmer for additional 10 minutes
